Flour ……2 cups
Baking powder….2 tsps
Salt…..2 tsp
Melted butter….12 cup
Sugar…..3/4 cup
Mango essence….1 tbsp
Eggs (large)…..2
Alphonso mango (chopped)…… 1 cup
Fresh mixed fruit, to decorate…. 1 cup

Mango Sponge Cake recipe Method:
Preheat oven to 180°C. Grease a 9 x 5 loaf pan and keep it aside. Sift the flour, the baking powder and salt into a mixing bowl. Set aside.
In a blender jug, place the melted butter, the chopped mango, the sugar, the mango essence and the eggs and combine until smooth. Now add this mango mixture into the flour mixture. Mix well to combine.
Pour the batter into the prepared loaf pan.
Bake in preheated oven for 45-50 minutes or until a toothpick inserted into the centre of the loaf comes out clean.
Let the cake cool in the pan for ten minutes, and then turn out onto a wire rack. Decorate the cake with fresh fruits. Serve with ice-cream or fresh cream.
