Prawn Curry with Green Mango Recipe

Ingredients:
Green mango (150 gms).
Onions (grated)…….2
Ginger paste………. 1 tsp
Garlic paste…..1 tsp
Refined oil…….3 tbsps
Turmeric powder…..2 tsp
Coriander powder…… 2 tbsps
Red chilli powder…….1 tsp
Coconut (grated)…….1/2 cup
Green chilli (halved)………1
Prawns (cleaned)………..250 gms
Mustard seeds……… 1 tsp
Fenugreek seeds……1/2 tsp
Curry leaves…15
Salt……..to taste

Method: Prawn Curry Recipe
Wash, peel and stone the mango, then cut into thin slices. Boil the mango pieces until soft, and set aside.
Heat two tablespoons of oil in a deep pan set over medium heat. Fry the grated onions with the ginger and garlic paste, until the onions turn translucent. Stir in the red chilli powder, turmeric and coriander, then saute until aromatic.

Add the grated coconut and saute briefly.
Tip the mixture into a blender with some water and then blend to a puree. Return the puree to the pan.

Add two cups of water, the boiled mango pieces, the green chilli and salt, and simmer for 10-15 minutes. Stir in the prawns now and cook until they turn pink.

In a separate pan, heat the remaining tablespoon of oil. Add the mustard seeds, the fenugreek seeds and the curry leaves and saute until they sizzle. Remove from heat and pour the mixture over the prawn curry. Mix well. Transfer the curry to a serving dish. Serve with rice.
